  • 4 large eggs or flax eggs for vegan adaptation
  • 1 teaspoon vanilla extract
  • ½ cup milk or almond/coconut milk for a dairy-free version
  • ½ cup sour cream or Greek yogurt for extra moisture
  • 1 lemon zest to enhance the nutty flavor
  • 1-2 tablespoons pistachio liqueur for an adult twist

Instructions
 

  • Step 1: Preheat your oven to 350°F (175°C). Grease and line a 9-inch round cake pan with parchment paper. Sift together flour, baking powder, salt, and ground pistachios.
  • Step 2: In a large mixing bowl, cream unsalted butter and granulated sugar until light and fluffy using an electric mixer for 3-5 minutes. Use room-temperature butter for best results.
  • Step 3: Add eggs one at a time, beating well after each addition. Stir in vanilla extract and lemon zest until fully combined.
  • Step 4: Alternately fold in the dry ingredients and milk into the mixture until smooth. Avoid overmixing to maintain a light texture.
  • Step 5: Pour the batter into the prepared cake pan, smooth the top, and sprinkle additional chopped pistachios. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.

Notes

Make sure not to overmix the batter to keep it light and airy. Adjust the baking time as needed based on your oven's performance.
