Equipment

  • Mixing bowls
  • Medium-sized saucepan
  • 13x9 inch baking pan
  • Parchment Paper
  • Spatula

Ingredients

For the Brownies

  • 12 Tablespoons butter cut into Tablespoon-sized pieces
  • 0.75 cup natural cocoa powder unsweetened
  • 1 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 2 large eggs lightly beaten
  • 1 large egg yolk lightly beaten
  • 1.25 cup all-purpose flour
  • 1 teaspoon cornstarch
  • 0.5 teaspoon salt

For the Glossy Frosting

  • 1 cup semisweet chocolate chips
  • 0.5 cup milk chocolate chips
  • 0.33 cup heavy cream
  • 1 teaspoon vanilla extract
  • 0.125 teaspoon salt just a pinch
  • 2 Tablespoons candy coated chips for topping

Instructions

  • Preheat your oven to 350°F (177°C). Grease and flour a 13x9 inch pan or line with parchment paper.
  • In a large microwave-safe bowl, melt the butter. Stir in the cocoa powder until smooth.
  • Add granulated sugar and brown sugar to the cocoa-butter mixture and stir well to combine.
  • Mix in the eggs and egg yolk one at a time, stirring well after each addition. Add vanilla extract.
  • In a separate bowl, whisk together the flour, cornstarch, and salt.
  • Gradually add the dry ingredients to the wet ingredients. Stir until just combined — do not overmix.
  • Spread the batter evenly into the prepared baking pan. Bake for 16–18 minutes, until a toothpick inserted in the center comes out with moist crumbs.
  • Let brownies cool completely in the pan before frosting.
  • For the frosting, combine chocolate chips and cream in a medium saucepan over medium-low heat. Stir constantly until melted and smooth.
  • Remove from heat and stir in vanilla extract and salt. Let the frosting cool for 5–10 minutes until still pourable but not hot.
  • Pour frosting over the cooled brownies and spread evenly with a spatula.
  • Immediately sprinkle candy coated chips on top while frosting is still wet.
  • Allow frosting to set for about 1 hour at room temperature or chill in the fridge for 15–20 minutes before slicing and serving.

Notes

For extra clean slices, use a sharp knife and wipe it between cuts. These brownies store well at room temperature for 3 days or in the fridge for up to a week.
